earlier in the day one of the locals had come by offering wine and oysters. we had plenty of wine from st marteen but we did get a dozen or so oysters for 17EC. The plan had been to BBQ them for lunch but that rolled into a dinner appetizer with aimee and jen making pizzas. the oysters turned out to be such a hit that when another local entrepreneur came by we decided to get some more. this time aimee handled the negotiation and we got about 30 or 40 for 15EC and a hunk of sausage!
i got busy on the grill piling them on one end until they moving them down to the other end adding garlic butter and finally removing the beard before loosening and serving. they where very well received and we really could have stopped here but we had pizzas in process so we continued on. we did these on the bbq as well. the first one came out perfectly as we had a grease fire at the end getting the “oven” temp up to 500F. the second one was not quite as perfectly crisped as i could only get to 400F. i think i need to clean the grill input line again, i should be able to get 500F no problem with just the burners. by the time i got off the grill i was exhausted, i think it was a 3 hour process!
in any case we ate all the pizza as well, yikes, dont think we will need to eat tomorrow!
